I also use AD. I choose the embedded DB and at the end of the setup the configuration asks to specify an admin. I try my account or 'administrator' and it errors stating it cannot contact the LDAP....

ahhhhh I had issues here as well. Try admin admin (default openfire creds), and perhaps restart the service.
